杏仁中的維生素B17對防癌是非常重要的成份

常吃杏仁(Almond )人長壽。
斐濟是現今世界上唯一沒有癌癥的國家~常吃杏仁

在南太平洋,有一個由322個島嶼組成的國家︰斐濟 (Fiji)。據資料介紹,斐濟是現今世界上唯一一個沒有癌癥的國家,全國62萬人中至今無一人患癌 (最近估計約有 85 萬人)。原來,居民們在飲食上有一個特殊的習慣,就是人人都吃杏。斐濟產杏,大大小小的島嶼上長滿了杏樹。居民們將杏加工成杏肉干、杏仁,做為日常食品食用。科學家研究發現,斐濟人不患癌與吃杏息息相關。

另據資料介紹,在喜馬拉雅山東南麓,有一個居住著五萬余人的少數民族地區,這里的人普遍長壽,平均壽命在90歲與100歲之間,他們幾乎與世間的病魔絕緣。他們居住的地方也是遍地杏樹。美國科學家考察後發現,該處的人能長命百歲,也與常食杏肉干和杏仁有關。

杏在中國的歷史也十分悠久,據說,在古老的仰韶文化中就有關于杏的記述。杏在我國分布也很廣,遍布大江南北、長城內外。古代文人墨客曾以杏為題創作出了許多優美的詩篇,其中"一枝紅杏出牆來"、"紅杏枝頭春意鬧"等詩句久傳不衰,讓人贊不絕口。

杏肉、杏仁均可食用。杏仁除可食用外,還是一味被人推崇的中藥。杏仁分苦、甜兩種,苦杏仁能止咳平喘、潤腸通便; 甜杏仁偏重滋養,有補虛、潤腸、散寒驅風、止瀉潤燥等功能,是醫治哮喘、支氣管炎、皮膚脫落、腸胃病藥。

《本草綱目》中指出︰杏仁甘、苦、溫、冷利,有小毒,主治咳逆上氣喘促,潤心肺,除肺熱。其它藥籍醫典中也有記載。

現代醫學研究證實,杏仁每100克含蛋白質35克左右,含脂肪50克左右,還含有豐富的鐵、鋅、鈣、鉀、磷、硒等礦物質 和豐富的維生素A、維生素C、維生素E、維生素B17等。美國科學家在喜馬拉雅山東南麓長壽地區考察得出,該地區居民每日所食的含杏的食品中,所含的維生素B17和維生素E 是西方人每日攝入量的20倍左右,而維生素B17具有抗癌作用,維生素E 被人們稱為抗氧化之王。

杏仁中的脂肪90%為不飽和脂肪酸,不飽和脂肪酸是一種對人體有益的脂肪酸,可降低人體內的膽固醇,促進血管健康, 預防高血脂、高血壓、動脈粥樣硬化等疾病的發生。

杏仁中豐富的硒元素對人體來說更是一種珍貴的微量元素,硒能幫助人體清除各種自由基,保護細胞免受有害物質的攻擊; 硒還有將對人體有害的如汞、鉛、鎘等重金屬物質排出體外的功能,使人體免受其害;硒還有抑制延緩細胞惡變的能力,並幫助細胞進行自我修復。人體若缺乏微量元素硒,極易導致癌癥的發生。

杏仁還是一種高能量食品,每100克杏仁中含514大卡能量,是牛羊肉的4倍左右,在幫人增加體能的同時,卻不增加體重。因此,杏仁是運動員的理想食品,更是工人、農民等高體能消耗的人的理想食品。

杏仁在預防心臟病方面,也有著獨特的作用。科學家研究得出,每周至少食一次杏仁的人,比不食杏仁的人,患心臟病的比率低25%,每周食5次杏仁的人,比每周一次也不食的人患,心臟病的比率低50%。

不過,大家亦要注意,杏仁應吃”原料裝”的 (raw),不加塩或烘焙,塩是心臟病的原因之一,經烘焙後的杏仁會失去維生素

    一勺芝麻醬勝過三塊魚

芝麻的營養作用和魚有很多相似之處
據《現代家庭報》報導,魚的營養非常豐富,在肉類食品中名列前茅。不過你很難想到,普通平凡的芝麻醬竟跟魚的營養成分相當,在食療保健上,它們有很多相似的營養作用。

l 健腦:
魚肉中豐富的歐米伽3不飽和脂肪酸,被人稱為「腦黃金」,對健腦益智、促進兒童智力發育非常有好處。芝麻醬也有很好的健腦功效,因為它跟魚一樣,含有豐富的不飽和脂肪酸。每100克芝麻醬的脂肪酸含量是黃花魚的13倍多,草魚的33倍!

護心降脂:
吃魚能保護心臟和心血管,這些好處也是魚肉中豐富的不飽和脂肪酸帶來的。而芝麻醬中豐富的不飽和脂肪酸也有同樣的作用。一勺芝麻醬(大約20克),其中的脂肪酸含量超過半斤的草魚和鯉魚!

補鈣高手:
芝麻醬中的鈣含量也比較高,每100克芝麻醬中含有612毫克鈣,遠高於牛奶、豆腐等常見的補鈣食品。

養血佳品:
芝麻醬還含有比較豐富的鐵和葉酸。鐵和葉酸都是造血不可缺少的原料。有近1/4的人群患缺鐵性貧血,補充富含鐵的食物非常必要。

防糖尿病和高血壓:
芝麻醬中含量較高的還有鋅和鉀,這兩種礦物質在防治糖尿病和高血壓方面有很好的作用:鋅參與胰島素的合成與降解;而鉀有舒張血管、促進鈉排泄的作用,有利於血壓健康。

抗氧化、防畸變:
芝麻醬中還有兩種維生素不能不提,一種是維生素E,一種是葉酸。前者有抗氧化、抗炎症的作用,因此經常吃芝麻醬能提高人體抗病能力、延緩衰老;而葉酸不僅是造血的原料,還是胎兒神經管發育不可缺少的營養素。女性在準備懷孕時每天吃點芝麻醬,一直堅持到懷孕3個月,能避免胎兒發生神經管畸形。
